CHIEF STEWARD - VESSEL CASE

Manages all aspects of vessel galley operations, including procuring food, preparing meals, managing galley budget, and managing galley staff.

 

Essential Functions

  1. Plans quantity and types of meals, beverages, and snacks for the vessel.
  2. Plans and budgets the meals to meet nutritional and economic goals of vessel.
  3. Orders and supervises the storage of all supplies, equipment, and provisions used by the assistant cook(s) and galley helpers used for meal preparation and for the cleaning of crew quarters and other common areas of the vessel.
  4. Keeps records and accounts. Responsible for maintaining an inventory control system and maintains cost control records.
  5. Supervises and directs activities of one or more workers who assist in preparing and serving meals, and cleaning galley.
  6. Oversees cleanliness of galley and maintains a clean working environment. 
  7. Oversees the housekeeping duties such as cleaning and stocking bathrooms and other common areas on the vessel.
  8. Must be capable of performing all essential functions for the assistant cook and galley helper positions.

 

Additional Responsibilities: 

  1. Assists and directs the loading and unlaoding of food and other supplies into various storage areas located on various levels of the vessel.
  2. Performs other similar or related duties as requested or assigned.
  3. Coordinates and participates in annual ADEC galley inspections and assists in responding to the results of those inspections.

 

Education:

One year certificate from college or technical school; or up to three years related experience and/or training; or equivalent combination of education and experience.

 

Certificates, Licenses, Registrations:

Needs appropriate food handler’s permit.

 

Experience:

Previous knowledge or experience aboard a maritime processing factory or in a related area.  Must have 2-3 years food preparation and management experience.

 

Special Training/Skills:

Ability to read and comprehend simple instructions, short correspondence, and memos.  Ability to write simple correspondence.  Ability to effectively present information in one-on-one and small group situations to customers, clients, and other employees of the organization.  Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals.  Ability to compute rate, ratio, and percent and to draw and interpret bar graphs.  To perform this job successfully, an individual should have knowledge of email, spreadsheet software, word processing software and presentation software.

Must be capable of boarding and departing (exiting) a vessel without assistance by moving up or climbing a gangplank , the stern ramp of  a vessel and/or a vertical ladder. Must be capable of boarding/departing the vessel by being lifted in a crane or manlift. May also enter and exit a skiff from a dock, plane, or  a boat unassisted. Must meet at designated locations to receive instructions and place on a life jacket and an immersion suit without assistance in one minute or less.  Must also move quickly without assistance to any designated life boat station.

 

Work Environment:

While performing the duties of this Job, the employee is regularly exposed to wet and/or humid conditions and moving mechanical parts.  The employee is frequently exposed to extreme cold. The employee is occasionally exposed to high, precarious places; fumes or airborne particles; toxic or caustic chemicals; outside weather conditions; risk of electrical shock and vibration.  The noise level in the work environment is usually loud.

 

Physical Demands:

While performing the duties of this Job, the employee is regularly required to stand; walk; use hands to finger, handle, or feel and reach with hands and arms. The employee is occasionally required to sit; climb or balance; stoop, kneel, crouch, or crawl and talk or hear. The employee must be able to climb or descend one or more set of steep stairs or vertical ladders both inside or outside in all weather conditions. The employee must regularly lift and /or move up to 10 pounds, frequently lift and/or move up to 25 pounds and occasionally lift and/or move up to 50 pounds.  Specific vision abilities required by this job include distance vision and depth perception.  May be required to distinguish shades of color to identify abnormalities and/or defects in food products.

Mental Activities:

While performing the duties of this job, the employee is regularly required to use teamwork skills.  The employee will occasionally use interpersonal and customer service skills.  The employee will occasionally perform basic math and read, speak and write English.  The employee will frequently need to understand English.
