SUMMARY

Develops new product formulations and provides improvements to existing battered and breaded products as project lead. Responsible for collaborating with project team on prototype development through full commercialization. Finalizes product attributes and specifications following successful commercialization.

ESSENTIAL FUNCTIONS:

Benchtop Development (~50% – 60%):

  • Collaborates with representatives from all departments within existing and potential accounts to assess requirements and collect information necessary in designing and making product recommendations.
  • May assist R&D Supervisor/Manager in bench top research and evaluation of new ingredients and product formulations, planning lab experiments, shelf life testing and production trials. Regularly contribute to New Product Development (NPD) creative exploration (10% of job scope).
  • Designs methods to improve ingredient qualities and food production in areas of flavor, color, texture, nutritional value, convenience, and/or physical, chemical, and microbiological composition of foods.
  • Compiles and records testing data and charts for ingredient performance, production test information/ summary and on-going projects.
  • Evaluates feasibility of various ingredient/recipe components in terms of functionality, formula and availability of company manufacturing, acceptability to target customer/geographic region of account, cost verification and Trident manufacturing capability.
  • Initiates, produces and supplies existing or prototype product samples designed to meet target account needs.
  • Prepares and ships out hand samples of new products for internal and external sampling/ evaluation.
  • Participates in detailed evaluation of product requirements from raw materials to internal and external distribution of product.
  • Leads and assists in sensory evaluations and prototype cuttings with cross-functional teams

Commercialization:

  • Drafts provisional specifications on prototype products prepared for target customer sampling.
  • Creates R&D preliminary processing spec and documents all tests (lab and plant trials) results. Assists Quality Assurance staff on product audits when necessary.
  • Collaborates with production team to direct and facilitate successful plant trials and production runs
  • Leads and assists in sensory evaluations and new product cuttings with cross-functional teams following production runs and plant trials

Additional Responsibilities

  • Participates in product cuttings / presentations to various vendors and customer groups introducing or re-acquainting them to specific products, ingredient features, benefits, requirements and application techniques.
  • Aids in the development of new product food standards, safety and sanitary regulations.
  • Adheres to basic health deparment food handling and safety requirements ie. proper storage of raw foods, personal handwashing and hygiene, food preparation area sanitizing, opening and closing procedure.
  • Provide clear communication of scheduled tasks, priorities and project status though weekly work plan summary. Provide adequate follow up regarding low priority projects.
  • Maintains and manages paper files and computer records for all projects in the appropriate location. Keeps personal space and ingredient storage clean organized. 
  • Helps in freezer clean up and keep track of frozen products.
  • Must be able to travel freely between the workplace and other Trident processing facilities. Occasional travel to customers located throughout targeted regions is expected.
  • Participate in regular operational safety training and meetings.
  • Performs other similar or related duties as requested or assigned.

Minimum Requirements

 

EDUCATION:

  • Master of Science degree in Food Science or related field and 2-3 years work experience and/or training in food manufacturing, product development
  • Bachelors of Science degree in Food Science or related field + 4-6 years work experience and/or training in food manufacturing, product development;

EXPERIENCE:

  • Food industry-specific knowledge of ingredients, food allergens, ingredient functionality and product formulas.
  • Experience with battered and breaded products is desirable
